Native to the Syrian city it’s named after, aleppo pepper is a favorite in culinary circles for its bright nuanced flavor and oil-rich make-up.
Sourcing & Storing
Unfortunately, most of the aleppo chilies currently available in the States are being produced across the Turkish border, since the conflict in Syria has all but destroyed pepper production [http://theplate.nationalgeographic.com/2014/05/16/a-brutal-war-destroys-a-city-and-a-spice/]. The flavor profiles of Turkish-grown aleppo chilies are very similar to their Syrian counterparts and can be used interchangeably in recipes. Store dried aleppo peppers in a air-tight container.
