The Urfa Biber Chili Pepper

This dark dry chili is a fixture of the markets in Turkey, where it plays an important role in many dishes. With a heat that builds slowly and a high oil content, it’s great for pairing with other bold flavors.

Sun-dried and generally sold pre-ground, urfa biber resembles coffee grounds or even potting soil.

Sourcing & Storing: Urfa biber is available (dried and ground) at many specialty food stores and online; it should be stored in an airtight container away from heat or bright light to maintain freshness.
