Your breakfast table will never be the same. The brown sugar and fat from the bacon act as restraints, curbing the chili’s intense heat just enough to let some of its subtler flavors come through.
Any habanero chili flakes will do, but we recommend using the Grove Blend Chili Flakes, which combines habanero spice with citrus notes. This unique flavor infusion puts the candy in candied bacon. Pair this bacon with blueberry pancakes or waffles for a real treat.
🌶 1 cup brown sugar
🌶 1 teaspoon dried habanero chili flakes or Grove Blend Chili Flakes
🌶 1 pound thick cut bacon
Preheat the oven to 350°. Line two baking sheets with aluminum foil.
In a shallow dish, mix together the brown sugar and habanero chili flakes. Press one side of each strip of bacon into the brown sugar mixture and arrange the bacon, sugar side up, on the prepared sheets.
Transfer to the oven and cook for about 20 minutes, until the bacon has crisped up and the sugar is caramelized. Carefully drain the bacon fat into a bowl (save for another use), then serve.
