Ingredients: (Serves 2)
1/3 cup Low-Fat Ricotta
1/4 cup chives, chopped
1/2 cup tomato, chopped
Chili Salt, to taste
Heat up your non-stick skillet. While it's heating, scramble eggs. Place them on the hot skillet and when they have begun to firm add ricotta. Mix together until eggs are fully cooked and add tomatoes, chives and chili salt to taste. Serve warm, with toast if desired.
